Memorial Day and The Summer Ahead

Well It has been a roller coaster the last few weeks here. My dad came up for a visit we had fun. The kiddos loved it. He came up to try to help with my son since he is having some issues which is contributing to the roller coaster here. Things are starting to look up.

After this weekend 15 days left of school before summer begins. One son don’t want school to end, the other believes it has already started. So who knows I wish there was a something in the middle there. I know the summer may be but we will get through just fine. I still don’t really care for Ned’s schedule however that is fine, nothing I can do about that.

18 hard boiled eggs
1/2 cup Mayo
1/8 -1/4 cup Mustard (depending on taste)

Right now I want to share what Being a daughter means to me,

Being a daughter I know I was not always the easiest to get along with, I realize I was often a pain.

I know I did not say I am sorry enough, or Thank you.

I Realize looking back I could have listened closer to what was being said the first time. I would have stayed out of trouble a lot of times.

Eazy Freezer Cooking Ideas

With the weather turning nicer and we are doing more and more activities, it seems to me that time gets shorter and shorter to prepare meals. On those evenings when I have a lot more time to cook some nights than others. When I do have extra time, I have what I like to call my easy freezer cooking ideas list, I try to cook an extra batch of food, stick it in the freezer and then just grab a meal that’s ready to be heated and served out of the freezer on the days when we’re really busy. Here’s a list of things I tend to either cook in batches, or cook while I’m working on that day’s regular dinner and then freeze for later.

This Weeks Wordless Wednesday was my Oldest son Alin’s track meet last week, when he was running the 100m If I remember correctly where he got 3rd. It was great watching him race I don’t think I ever really realized how much he realized how much he really enjoyed it.
