Well I decided today I wanted a PB&J got up to get things ready and no jelly, Yes I could have ran to the store but for me I don’t like the stuff from the store. So I decided to make some. I shared a picture on Facebook and was asked how to make it?? Well here is how I make it.

Fast Easy Bean Dip

If you are in need of a healthy snack, or maybe a quick dip for a party this coming week. Here is a neat idea.

For lunch yesterday we had enchiladas rice and black beans, Well we didn’t (which rarely happens) ate all the beans, usually they get shoved in the fridge and forgotten. That totally drives me crazy. So before I could forget they were there I tossed them in the food processor, added the ingredients below turned on low for about a minute and a yummy dip was the result. Even my son who isn’t a big bean eater loved it.

Little Ham Potato Soup Cups

  • 2 tablespoons butter
  • 1 cup diced smoked ham
  • 4 sliced green onions
  • 1 garlic clove, minced
  • 2 cups mashed potatoes
  • 1 (14 oz) can chicken broth
  • 1 cup milk
  • 1/3 cup sweet green peas
  • 2 teaspoons chopped fresh thyme
  • salt and pepper
  • 2 cups torn up dinner rolls
  • 1 cup (4 oz.) shredded Cheddar cheese

Melt butter in a large saucepan; add diced ham, green onions, and minced garlic; cooking over low heat until garlic is fragrant.

Add the mashed potatoes, broth, milk, peas, and thyme, stirring to combine.

Kids Choosing Healthy

Yesterday I had to pick up the kids from school then head out of town to do a few things with the church. These two always need a snack after school and from day to day it varies.  I decided that before picking them up I would pack a snack since I didn’t know how long we would be gone I would grab a few things, not knowing exactly what they would want I decided to grab enough so they could have enough to hold them over so we wouldnt have to stop and grab anything while we were out. I grabbed two tangerines, an apple, some carrot sticks, some celery with peanut butter on top, some chips and some cookies. I figured that would be enough for the 4 hours I figured it would take and probably enough to share with mom.

Freezing Vegetables and Fruit Guide
