Chilli Popcorn Movie Snack

Ingredients:

  • 2 tbsp vegetable oil
  • 1 cup popping corn
  • 6 tbsp butter
  • 1/2 tsp cayenne pepper
  • 1/2 tsp hot paprika
  • 1 tsp salt


Method:

In a large, heavy saucepan heat the oil, add the popcorn, cover and cook until corn stops popping. Arrange popcorn in a serving bowl.

Meanwhile, melt the butter in the saucepan, stir in cayenne pepper, paprika and salt and pour over popcorn.

Mix well and enjoy this snack with the whole family while watching a favorite movie.

Springtime Pasta with Asparagus

With today the first day of Spring I wanted to share this yummy recipe easy to make and a great way to bring some color to the dinner table
Ingredients:

  • 14 oz of small shell pasta
  • 1 lb asparagus
  • 2 carrots, peeled
  • 1 small onion, diced
  • 1 celery stalk, cut into thin strips
  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • Salt and Pepper
  • Parmesan cheese

Method:

  1. Boil pasta according to packet instructions. Set aside.

Nutty Broccoli Chicken Stir Fry

Ingredients:

  • 1 tbsp soy sauce
  • 2 tsp rice vinegar or white wine vinegar
  • Juice of 1 small orange (or freshly pressed orange juice)
  • 1 tsp brown sugar
  • 2 tsp cornflour
  • 2 tbsp vegetable oil
  • 3oz unsalted cashew nuts
  • 1 medium onion, thinly sliced
  • 1 large skinless, boneless chicken breast, cut into bite-size pieces
  • 9 oz small broccoli florets
  • 1 red bell pepper, cored and thinly sliced
  • 5 oz sugar peas

Children’s Favorite Turkey Burgers

Ingredients:

  • 2 tbsp olive oil
  • 1 large onion, finely chopped
  • 2 garlic cloves, crushed
  • 3 oz oats
  • 1lb ground turkey
  • 4 oz dried apricots, finely chopped
  • 1 large carrot, grated
  • 1 egg, slightly beaten

Method:
Preheat oven to 400?F.

In a frying pan, heat 1 tbsp of oil, then saut? onions until translucent. Add the garlic and saut? for another minute, then add oats and fry for another few minutes. Pour into a bowl and set aside.

Creamy Three Fruit Salad

If your like me getting healthy stuff in your little ones isn’t always the easiest thing to do. Yes this does have some sugar the way I tend to look at getting them to eat fruits and veggies is yes dips and some sauces have some sugar in them however it does not remove the vitamins and minerals that they contain. So for me its ok as long as its a treat and the rest of the meals and snacks are less in the bad stuff. This is also is a great kid friendly recipe for them to help make. cutting the fruit is something my daughter loves to do.
