Here I am with a lot of zucchini. A couple of days ago my son Jeffery brought home three huge zucchinis. I usually only buy them when a recipe calls for it and its usually a small one that you usually get from the store. First thought was zucchini bread, never have made it or even tasted it, I figured it was worth a try. I asked on facebook got no one who knew so I hit my swagbucks toolbar. I found a few then came across the one on the Food Network website it is for Chocolate Chip Zucchini Bread sounded good. Off to the kitchen I went and this is what came out.I didn’t care for it all that much, I like the bites with out the chocolate chips for me it just didn’t add anything to it.

With a ton of the zucchini shredded I was on the hunt for something else to make with these. Back to the search I went I came across different things like soups, stews and grilled nothing that needed shredded. I then came across Squash and Zucchini Cakes they sounded pretty good. I did have to substitute the yellow squash for spaghetti squash and the Vidalia onion for yellow onion. I also made them a little thinner then they say in the recipe. Turned out pretty good even my picky eaters ate it right up.

I am still looking for more since i still have two more huge ones left. Do you have any other ideas?
